The sun is out more often. The days are getting longer. The breeze is getting warmer. The air has the Springtime aroma. Summer is just around the corner and I’m starting to feel the desire to eat more salad again!
My fridge is always stocked with salad greens, cherry tomatoes, cucumber, celery, carrots, fresh beets, olives and red onion, but what I don’t always have is a repertoire of different dressings.
Recently I adapted a recipe for a Vegan Caesar Salad and this has become a huge favourite at our meal table. Whenever I create this salad we all end up squabbling about who will get a third serving. It was after I created this dressing that I started to think about how amazing many more salads could become if I had a few more decadent dressing recipes to call upon.

These 6 dressings are all simple to make, don’t require a whole batch of tricky ingredients, and store in the fridge for a few days.
This is my most favourite dressing. I think it is the capers that really give this the tastiest twist, and I’m a big fan of those little salty capers. Recently my husband also found that dolloping this dressing on jacket potatoes is also a thing (a very good thing!). When I lavish this Vegan Caesar Dressing on my Caesar Salad it is totally delicious and we go back for seconds and thirds. It’s one of those salads that never lasts long in the salad bowl and with the croutons is a very substantial and filling salad on its own too!
This 10 Second Mayo really is the simplest mayo recipe ever! Who would have dreamt that you could whip up a mayo in such a short time with some simple ingredients and a stick mixer?! I was stunned when I gave this a try – it was like some sort of magic as the seconds ticked by and mayo was created! You can use this mayo like you would any store bought version, but it is also amazing as a potato salad or a coleslaw dressing, or a tasty dipping sauce for potato wedges. This mayo will store in the fridge for weeks.
Creamy Balsamic Bliss Dressing
This Creamy Balsamic Bliss Dressing is very tasty poured over a salad of leafy greens and cherry tomatoes. It is so sweet and rich. I’ve always been a fan of balsamic vinegar and olive oil dressing but I have to admit that putting something creamy on salad is next level. This dressing has all the flavours I’ve always loved, but with the simple addition of tahini it becomes super creamy.
This sauce is zesty, spicy and rich in peanut taste! It is amazing poured over everything from quinoa, brown rice, noodles, or salads. It is so perfect on any warm Asian-style salad – with either soft or crispy noodles. It is even great as a dipping sauce for Vietnamese rice paper rolls. I love to keep a jar of this in my fridge as it is a great shortcut when you are whipping up a quick dinner of noodles and need the perfect dressing to take it to the next level!
Mustard and creaminess – two of my favourite things. If you like a Dijon mustard flavour then a highly recommend you try this Creamy Mustard Dressing. It’s totally delectable on salads, with rice, drizzled on buddha bowls, and as a dip for fresh vegetables. It is thick enough to add to wraps, sandwiches and rolls, and a great addition to your picnic spread.
If you love tahini then this is the dressing for you. Tahini is really nutritious and definitely worth incorporating into your diet if you can. This dressing is not only tasty but it’s nutritious too! Lots of Vitamin C, Calcium and Iron in this recipe. It might just be 5 simple ingredients, but blended together they really pack a flavour punch and can transform your salad.
