
The Ultimate Christmas Spread Your Family Will Love!
It’s around this time every year that I start to think about my Christmas dinner. I dream of mountains of delicious, plant-based delights to leave me so satisfied that I can relax away my balmy Christmas evening.
My family are big fans of the full ‘roast’ cook-up for Christmas dinner but I also add some lighter, summery salads too (we are in Australia after all). Making the full spread vegan is so easy when you know how, and will satisfy your omnivorous family too!
Everything on my menu can be homemade from scratch, but as Christmas is a busy time I purchase many items from the supermarket so I can spend Christmas morning relaxing rather than slaving away in the kitchen.
A plant-based Christmas is really easy. I urge you to try some new plant-based tastiness this festive season.
Generally my Christmas Dinner Menu goes something like this:
MAIN FARE
This can be made the day ahead and served cold. Delicious either way, and protein packed!
Vegie Delights Roast (store bought in the cold section in Coles). These roast rolls are even great sliced up and cooked on the BBQ.
SIDES
Rosemary and maple roasted pumpkin, sweet potato and red onion
Hassleback potatoes with pesto
Stuffing balls with walnut and cranberries (store bought stuffing mix then add walnut pieces and dried cranberries)
Lightly steamed broccolini served with roasted pinenuts, pinch of sea salt, drizzle of EVOO and squeeze of lemon juice
SALADS
Nectarines remind me of Summer and provide a gentle touch to this Nectarine Summer Salad. Their sweetness softens the tartness of the dressing and provides a taste sensation that will leave everyone asking for the recipe.
Beetroot, Barley & Macadamia Salad
Beetroot and blood oranges make for a gorgeous salad presentation that will impress your guests. The blood oranges and balsamic beetroot provide the perfect combination of sweet and salty. Yum!
CONDIMENTS
Gravy (store bought Massel brand is easy to prepare and vegan – can purchase in Coles and Woolworths)
Cranberry jelly (store bought)
Mustard (store bought)
REFRESHMENT

DESSERT
Christmas pudding (store bought ‘accidentally’ vegan pudding from Coles) served with soy vanilla icecream (store bought Soy Good Vanilla Icecream in Coles and Woolworths)
These Chocolate Ginger Truffles are divine! You won’t be able to stop at just one.
The marshmallows and lollies in traditional rocky road are loaded with gelatin. This vegan alternative is made with easy-to-find ingredients from your local supermarket.
