Caramelised Balsamic Onions

    1. Choose a large thick-based saucepan to make this recipe.

    2. Halve and slice the onions. Place in the saucepan with the oil and water and fry everything, stirring often. Continue frying until onions start softening.

    3. Add the sugar, balsamic vinegar and salt and stir through.

    4. Keep simmering, making sure to stir and check onions are not burning.

    5. After about 20 minutes the onions will have thickened up and look shiny.

    6. Place in jars and allow to cool. Refrigerate.
