Method

    1. Pan fry the chickpeas, mushrooms, water (to assist cooking), herbs and spices for 10 minutes, or until mushrooms are starting to brown. Water should have completely evaporated.

    2. Squeeze over lemon juice and mix through the spinach leaves.

    3. Serve in a bowl and add a big spoonful of hummus for an extra dimension or add to rice or pasta.
