1. Using a peeler remove the zest from one of the grapefruits and chop up into marmalade-sized pieces.
2. Blend grapefruit pieces until it becomes a smooth purée.
3. Bring to boil the grapefruit purée, sugar and zest, then simmer for 35 minutes.
4. Test setting point by removing a small teaspoon of marmalade and place on a cold plate to check it thickens. If it thickens then it is ready to pour into jars, if not then boil for a little longer. Store the jars in the fridge and consume within a month.
