Method
1. Lightly fry the onion, garlic and leeks with oil in a saucepan.
2. Add the water, stock, par boiled potatoes and seasoning.
3. Bring to boil then simmer for 20 minutes.
4. Add the coconut milk and nutritional yeast and blend until smooth.
5. Reheat and serve.
