Lentil & Tomato Soup

    1. Boil lentils for 10 minutes then drain.

    2. Place the drained lentils, chopped onion and garlic, tinned tomatoes, herbs and seasoning into a large pot. Boil for 45 minutes until lentils are fully cooked.

    3. Remove 80% of the soup and blend, then add back into the pot with the unblended soup. Serve and enjoy!

    --Note: you can make this soup ahead of time and leave to rest until you'd like to reheat.
