This Chia overnight jar is one of my favourites. It's simple to put together and full of goodness that will keep you going all morning. Packed full of protein, vitamin A, C, and iron.

Method

    1. Place chia seeds, rolled oats, vanilla bean paste and coconut milk in a jar. Stir to combine and then refrigerate overnight. If this appears dry by morning, top up with additional coconut milk.

    2. Cut mango into chunks and add to the top of the jar with shredded coconut.

    3. Enjoy.
