1. Heat the oil in a pan, then fry the onion, garlic, capsicum and mushrooms until cooked and browned.
2. Add the kidney beans, black beans and spices and continue frying for another few minutes.
3. Add the water and simmer for 20 minutes (stirring often until water has reduced).
4. Meanwhile prep all the toppings. Once the filling is cooked load up your taco shells with the filling, toppings and a generous squeeze of lime, then enjoy!
Optional topping: fresh coriander (chopped), non-dairy sour cream, hot sauce!
