Method
1. Heat oil in a saucepan and cook the onion and garlic for 5 mins (or until onion has softened).
2. Add the sweet potato, carrot, celery, and zucchini, and cook for a further 5 mins.
3. Dissolve the vegetable stock in water and add to pot with tomatoes and tomato paste.
4. Bring to the boil then reduce to simmer and cook for 1 hour.
5. Add the herbs and cook for a further 10 minutes.
6. Add cooked pasta shells just before serving.
