1. Place all crust ingredients into a high-speed blender and blend until they begin to bind together (you can add more Medjool dates as needed).
2. Press evenly into the bottom of 12 muffin moulds then set aside.
3. Place all filling ingredients into a high-speed blender and blend (on high speed) until silky smooth.
4. Pour the filling into the muffin moulds and then place into the freezer.
These will keep in the freezer for quite a while. When you want to eat, just take out the required number of Mini 'Cheese' Cakes and allow to defrost at room temperature for 15 minutes. You can top with all sorts of goodies as desired - berries, lemon curd, chocolate...
