Method

    1. Prepare dried noodles as per instructions on packet. Set aside.

    2. Sauté mushrooms in a little water and balsamic vinegar. Set aside.

    3. Blend dressing ingredients until smooth.

    4. In a large salad bowl add all noodle salad ingredients.

    5. Pour over dressing and mix through.

    6. Garnish with crushed peanuts and spring onions. Serve.
