1. Purée onion, garlic, ginger and 1/4 cup water in a food processor until smooth.
2. Heat oil in a frypan and then heat purée mixture for 5 minutes until fragrant.
3. Add tomato paste and tinned tomatoes and cook for 2 minutes.
4. Add spices and cook for another 2 minutes.
5. Add mushrooms, salt and water and simmer for 10 minutes.
6. Add potatoes and simmer for another 5 minutes.
7. Sprinkle with Garam Masala and cook for another minute.
8. Serve with basmati rice and pappadums.
