Method

    1. Pre-heat oven to 180°C (356°F).

    2. Roast red onion and garlic. Set aside.

    3. Sauté mushrooms with garlic powder, balsamic vinegar and water until cooked and browned. Set aside.

    4. Process all pastry ingredients until dough consistency forms.

    5. Press dough into an overproof dish. Set aside.

    6. Process base ingredients until smooth.

    7. Spoon mixture onto the pastry and smooth it around the base.

    8. Cover base mixture with mushrooms, roasted onion and garlic, and cherry tomatoes.

    9. Bake for 25 minutes until pastry in cooked.
