Method

    1. Lightly fry the onion and garlic until browned.

    2. Add mushrooms and courgette and fry until cooked and browned.

    3. Add walnuts, tinned tomatoes, tomato paste, water, herbs and seasoning. Simmer for 30 minutes.

    4. Serve with al dente pasta of your choice.
