Method
1. Lightly toast the slithered almonds and pepitas with a little oil. Set aside.
2. Combine the lentils, salad greens and spring onion.
3. Mix together the dressing ingredients and pour over the salad.
4. Scatter the cherries and toasted almond and pepitas over the top.
5. Serve!
