Method
1. Put the cinnamon and quinoa together in a saucepan and toast for a couple of minutes (stirring often).
2. Add the milk, water, vanilla, maple syrup, and apricots. Bring the mixture to boil then reduce heat.
3. Simmer for 20-25 minutes until the liquid reduces and quinoa is cooked.
4. Top with almonds and sunflower seeds to serve. Enjoy!
NOTE: Try adding chopped fresh strawberries, coconut milk and/or coconut yogurt to the top for extra deliciousness!
