Rice pudding was always a big favourite in our house especially when Winter really started to set in. This recipe provides you with not only the comforting taste of traditional rice pudding but the additional spices will warm you from the inside.

Method

    1. Combine all dry ingredients in a saucepan

    2. Add 400ml of coconut milk and bring to simmer

    3. Gradually add remaining liquid and simmer over low heat for 1 hour.

    Add extra liquid as needed to ensure it doesn't become too stodgy.
