Method

    1. Heat coconut oil in frypan then add onion, red pepper and garlic.

    2. Fry until cooked and browned.

    3. Add remainder of ingredients and fry for 10 minutes. Stir occasionally to break up tofu but don't over stir as you want to have an scrambled egg appearance.

    4. Serve for breakfast, lunch or dinner!
