1. Preheat oven to 180°C (356°F).
2. Add all cake ingredients to food processor and mix until smooth.
3. Spoon mixture into patty cases and bake in the oven until cakes are springy to touch and a skewer comes out clean.
4. Remove from the oven and allow to cool.
5. Prepare the frosting. Blend all frosting ingredients until light and smooth, add a little soy milk if needed.
6. Spread frosting onto cooled cupcakes. Decorate as desired.
