
Walnut Lentil Salad
Lentils are a great source of protein and are also quite filling. This salad was created to fill my desire for something tart yet creamy and it's a definite favourite in our house. The cayenne pepper also gives it some extra spice. Easy to put together and any extra dressing can be saved for later in the jar its created in meaning less washing up!

Method
1. Combine all salad ingredients in a large bowl.
2. Prepare the dressing by combining all ingredients in a jar, secure lid and shake to combine.
3. Gently stir dressing through the salad and serve.
