With the kids heading back to school next week, I have decided I need to find some quick and easy plant based breakfast ideas. I usually feed them and worry about myself later, however what that really means is I feed them and then forget about me until late morning when I’m starting to feel low on energy. I guess my focus is always about getting them out the door as a priority. I really want to change that though.
We have recently moved house and the kid’s school is now about 1.5kms away – it used to be a few houses away. As a result, we would really like to start riding our bikes to and from school for a bit of exercise, and also for the fun of it. It’s not that far, but it does mean leaving home about 20 minutes earlier than we are used to, and 20 minutes in the morning in our house is a loooonnnnng time!
I don’t necessarily have to eat before the school run, but I would definitely like to eat as soon as I get back at the very latest, and the only way that is going to happen is if I have something ready to go. Something I can just pull out of the fridge and enjoy. On that note, it needs to be tasty, and as an added bonus, I would really like it to be nutritious too!
